# sugarcane juice dosa

 


It was my long time dream to prepare yummy soft and pluffy sugarcane juice dosa. But many times I ended up with hard ones. Finally I got the secret to make it soft and pluffy like bread!
For this soak dosa rice for 4- 6 hours in sugarcane juice. Blend with sugarcane juice and turmeric powder to get nice colour. If you like to make your dosa very sweet you can add extra jaggery while blending. Otherwise natural flavour of sugarcane itself is good for dosa. Add some boiled rice inmixi jar for blending at the end. This makes dosa very soft and pluffy..
Now keep the batter overnight for fermentation. Add salt as per requirement and mix the batter well in the morning to prepare sugarcane juice dosa in low to medium flame. No need to spread the dosa very thin as usual.
Eat yummy pluffy hot sugarcane juice dosa with ghee!





# kiriksali soppu bhaji

      


                       The name of this green leafy vegetable is kiriksali soppu or tiraksali soppu in local language. The vegetable vendor in sunday local market introduced me this first time. I asked many of my friends regarding this but got different views. This resembles rajgiri soppu and is a variety of amaranth leaves or bili harive.


                       If you know more about this please do share.. Definitely this is good source of iron and vitamins. I have combined the clean choppings with green peas. Like any bhaji add onion, tomato, garlic, mustard, cumin, green chilli, salt and coconut gratings and cook well. Other day I prepared the bhaji of these leaves with soaked greengram. That is also a good combination. Idea is to combine vitamins and iron with proteins. Ultimately when we eat with rice or chapati ( source of carbohydrate) it turns out to be complete food with all nutrients.

#Beetroot soppu recipes

               Beetroot soppu is a rich source of iron and vitamins. 





              I prepared this beetroot leaves parata specially on valentines day.. Chop and clean beet root leaves. Fry with little oil. Now prepare the dough with wheat flour, salt and water. Roll parata of shape of your choice and roast both sides. This goes well with coconut chutney or sauce or ghee..





                Beetroot leaves chopped and cleaned. Mix with boiled avarekalu , tomato and onion choppings. Add salt and chilli powder. Cook well to get beetroot leaves Baji really tasty and healthy with chapati.
