# Bellatte bajji

 


 

Commonly seen plant in western ghats is this dhobhi plant or ಬೆಳ್ಳಟ್ಟೆ in Kannada.. Fascinated by the white leaves we used to keep them in the books in our childhood..

These white leaves are modified leaves to attract insects for pollination. Traditionally known to be sacred in Ganesha Pooja and also believed to cure jaundice. Used as herbal shampoo as well.

Picked few leaves of bellatte while travelling recently and tried this desi food bellatte bajji.

Prepare batter with rice flour, besan and corn flour in 3:2:1 quantity so that bhajji becomes damn crispy. Salt ,chilli powder, garam masala as per taste requirements. Kept in refrigerator for 15 min. Dip the individual leaf in batter and deep fry in oil to get yummy and desi recipe bellatte bajji..

Heard that some special sweet can prepared with bellatte leaves by frying with maida batter and soaked in sugar syrup to get sweet resembling badam poori .. Please share if anybody has tried or tasted..

# Rose petal chutney

 


 

Rose petals! Lovely and believe me.. Tasty also!! I have used around 6 petals of white rose freshly plucked from my garden..

Fry rose petals in oil with sesame and chilli. Add coconut, salt, tamarind and water. Blend and garnish with fried mustard.. Goes well with dosa or chapati.. If you like to experiment different chutneys .. Here is the one.. Rose petals are cooling agents and have antioxidant properties.. Try this desi food once.. Hope you like it..



# Dates Holige and Pineapple Holige

 

 


If you like to try out new sweets in shravana go for these two different holige or obbattu..

Dates or kharjoora is highly nutritious, improves bowel movement, rich in antioxidants. Remove the seeds and blend with jaggery if you want it sweeter.. Prepare small balls. Kanaka of holige is prepared like any other type holige with maida, oil and water. Keep aside for some time. Roll the kanaka balls and fill with dates balls and roll again.. Put on tawa .. Your desi recipe of dates holige is ready to taste..

Likewise you can use pineapple instead of dates. Here pineple pieces to be blend without adding water. Mix with sugar and prepare jam on stove with continuous stirring. Once you get the proper consistency allow to cool so that it becomes sticky. Now prepare the ball to filled in kanaka and roll as before. Pineapple holige will have an awesome aroma.. A must try desi food..

# Rice kesaribath

 

Rice kesaribath or saffron rice is cooked traditionally with rice, sugar, saffron, milk, ghee, dry fruits, pinch of salt and lemon juice. Aptly titled as the king of sweets among desi recipes!
Saffron is good for health as it is an anti oxidant and anti carcinogenic, alleged to elevate the mood and aid 
in weight loss!!

#Jambe sabji

 





Jambe hannu (? Rose apple) is very delicious to eat and favorite of many. People usually go nostalgic spotting it. Tried this hot and spicy subji with jambe hannu.. Innovative and unique.. 
Fry red chillies, urad dal, toordaal, mustard, cumin, curry leaves.. If you want you can add garam masala also.. Powder it in mixi without adding water. Then fry chopped tomato and onion with chopped jambe pieces. Add the powdered masala and salt as per your taste. Hot and sour, spice jambe sabji is ready.. Goes well with dosa, roti, chapati..

# Tagate soppu pakoda and chutney

 




All would have seen Tagate soppu.. Grows abundant as soon as rainy season starts..in your backyard and roadside.. everywhere you can spot it. Little tangy if you cook directly. Take clean leaves and fry in cooking oil to get rid of this. Rich in vitamins and iron.
Tagate soppina tambuli and palya are cooked traditionally.. And good for health.
Try this tagate soppina pakoda .. Sounds different.. Take fried tagatesoppu, vertically sliced onions, besan and rice flour in equal quantity, chilly powder, garam masala powder, cumin, chopped ginger, salt and very little water to get thick batter. You can add one spoon corn flour to make the pakoda crispy.. Deep fry and drain the excess oil to get yummy crispy tagate soppina pakoda and serve hot!
For combo chutney same tagate soppu can be used or you can try this tagate soppina chutney with dosa or chapati. Fried tagatesoppu with cumin added to mixi with coconut, green chilly ( or bird's eye chilly), tamarind, salt and water to blend. Desi chutney from tagate soppu is ready.. If you want to try different chutneys for sides with breakfast.. Think of tagate soppina chutney!!

#Ondelaga chutney

 




Ondelaga/ urigedadi/ brahmi is popular for memory tonic, hair growth. Also a home remedy for acidity and body heat. Good for breastfeeding mothers.

Ondelaga tambuli is a well known recipe. Try this Ondelaga chutney with dosa for breakfast.. Unimaginable taste..

Take few ondelaga leaves and fry with one spoon urad dal and half spoon cumin in cooking oil. Blend with coconut, tamarind, salt, water and green chilies as for any other chutney. If you can replace green chillies with bird's eye chillies( ಸೂಜಿ ಮೆಣಸು/ ಸಣ್ಣ ಮೆಣಸು) taste will be really awesome. Then garnish with mustard and red chilly fried in oil to get the desired desi recipe..



# Colocasia cutlet

 

Colocasia leaf or kesuvina soppin cutlet is the blend of desi and modern cooking.. Chop the leaves and put in pressure cooker with salt and tamarind. After cooling drain the water and put in mixi,  keep aside. Take urad dal, chana dal, toor dal two spoon each and dry roast with little mustard, cumin, red chilly. Blend it without water to get coarse spicy powder.. Mix with paste of colocasia to get the batter of consistency similar to chapati. Make patties and roast both sides on tawa with cooking oil to get yummy modern cutlet of  traditional kesuvina soppy!

# Nutmeg chutney

 


Nutmeg or jayikayi to be consumed in limited quantity.. Good for pain relief and insomnia.
Cut open the nutmeg and remove the seed. Burn on gas flame directly so as to remove outer coat. Slice and blend with green chilly, coconut, tamarind, salt and water. Garnish with fried mustard, urad dal and curry leaves. Yummy and different nutmeg chutney is ready to serve..
I have used one fourth part of this nutmeg to prepare this quantity of chutney.

# Jackfruit dosa

 

soak  two cup dosa rice overnight and grind with handful jackfruit and little water to get the batter. You can add jaggery if you want it sweeter.. A pinch of turmeric gives nice colour.. Add salt as per taste. Keep aside for ten minutes. Then spread the batter on tawa with the help of banana leaf fold used traditionally to get papery thin crispy dosa. Delicious flavour is really amazing! 

# Golisoppina rotti- chutney

 



Golisoppu/ Bombay basale/ nelabasale grows plenty in rainy season. Good for anaemia. Chopped leaves fried in little cooking oil and mixed with rice flour. Add chopped onions, ginger, coriander, curry leaves, cumin, grated carrot, turmeric and salt as per your taste to prepare nice roti as usual.
Combo chutney is also prepared from same goli soppu.. For this boiled leaves to be blend with green chilly, tamarind, coconut, garlic and salt.
Healthy and tasty hasi( raita), palya, sambar, tambuli also can be prepared in traditional way like any other green leafy vegetable
.. Good for summer season..

#pomegranate peel dishes

 



Don't throw pomegranate peels.. Here is pomegranate peel (ದಾಳಿಂಬೆ ಸಿಪ್ಪೆ) chutney and tambuli..!!

Remember this home remedy for loose motion.. 
Few pieces of pomegranate peels to be fried in cooking oil with cumin and pepper. Add tamarind, salt, red chilly, grated coconut and water to blend. Pomegranate peel chutney is ready to serve!
Simply blending the fried peels with cumin, pepper, grated coconut, salt and water and finally adding to curds will give you the required tambuli..garnish with fried mustard and curry leaves.
You can dry the pomegranate peels in sunlight and store it.. So as to use for home remedy.

# Pomelo payasam

 You can even try this Pomelo payasam with vermicelli, milk, sugar, ghee, cardamom, dry fruits and basil seeds... Pomelo adds a crunchy taste..very unique..



# Pomelo Raita

 


Pomelo (ಚಕ್ಕೋತ) rich in antioxidants and vitamins. Try pomelo raita easy and yummy recipe which goes well with veg pulao. Add chopped onion, tomato, coriander, chilly, cucumber to curds with salt and finally add pomelo pulp. Garnish with fried mustard in oil and your recipe is ready!
